Winemaking Notes
The grapes for this Sangiovese are grown in the territories of Ortona, San Salvo, and Pollutri on the Adriatic coast, where the vines are planted with a south-eastern aspect on clay-limestone soil and trained using the traditional pergola training system. Following harvest, the grapes are de-stemmed and crushed before undergoing an initial cold maceration for two days to enhance colour and aromatic extraction. Maceration and fermentation then follow at controlled temperatures of 22-24°C for 9-11 days, allowing optimal flavour development whilst preserving the wine's fresh fruit character. Between 10 and 20% of the wine is aged in oak, with the remainder matured in stainless steel, creating a balanced expression that combines subtle oak complexity with vibrant fruit purity. The refined "Fantini by Farnese" wines complete their ageing process in the beautiful cellars of the Caldora Castle, a historical building renovated to safeguard the cultural heritage and viticultural tradition of Ortona.

The 2024 vintage in Abruzzo provided excellent conditions for Sangiovese production, with the Adriatic coastal influence moderating temperatures and ensuring steady ripening throughout the growing season.
