Penfolds Bin 707 is the quintessential Australian Cabernet Sauvignon. The winemaking philosophy of Bin 707 is similar to that of Grange, that is ripe full-flavoured grapes, completion of fermentation in barrel and new American oak maturation. The result is a wine of great richness, power, harmony and concentration with the structure and strength to age for the long term. The 1997 Bin 707 is a multi-regional blend from South Australia, showcasing the classic Penfolds "house style". Matured for 15 months in new American oak, the wine displays opaque, deep red colour, ripe red berries with varietal leafy cassis fruits, stylish integrated oak with hints of smokiness and subtle cedar aromas. The palate is rich and ripe with dark cherry and raspberry fruit flavours, some dark chocolate and integrated smoky oak. The 1997 vintage is lauded for its structure and is a premier example of Australian Cabernet Sauvignon, often described as a "big, bold" wine with significant ageing potential.

Vintage Conditions

The 1997 vintage enjoyed a cool summer that was followed by warm weather in late March and April. Winter rainfall had been excellent in most districts and good rains continued into September and past bud-burst. These ideal conditions allowed the Cabernet Sauvignon to develop intense fruit concentration whilst maintaining natural acidity and structure. The cool summer period enabled even ripening, followed by warm late-season weather that brought the fruit to optimal maturity. The result is a wine with opaque, deep red colour, concentrated palate of cassis, dark fruits, chocolate, tobacco and cedarwood with lingering tannins. The 1997 vintage produced a highly regarded, full-bodied Australian red wine with intense fruit concentration, supple body and structured tannins. As a collectible, mature vintage, the 1997 Bin 707 is considered a classic and top-tier South Australian Cabernet with peak drinking from 2006 to 2020, showcasing the exceptional quality that defines this benchmark vintage.
