Appearance

Pale gold, limpid and brilliant.

Aroma

Expressive first nose with slightly smoky, flint notes. After oxygenation, fresh notes of citrus fruits and lemon zest with subtle fresh almond.

Palate

Energetic and fruity with lemon aromas. Light and digestible with a beautiful minerality and elegant bitterness on the finish that brings tension. The finish is saline and persistent.

Pairs With

Fresh oysters, seafood platters, fish and prawns à la plancha, grilled fish, goat's cheese. The ideal aperitif.

Maturation on fine lees in stainless steel tanks — a winemaking approach that preserves the pristine citrus freshness, mineral character, and crystalline tonality of the Kimmeridgian terroir without the interference of oak.

Producer History

The Chablis vineyards are among the oldest in France — cultivated on both banks of the river Serein across seventeen villages, with an exceptional reputation for white wines produced from Chardonnay that has spread to all four corners of the world. The unique character of Chablis originates in its predominantly Kimmeridgian soil — sediment composed of large quantities of fossilised oysters called exogyra virgula, found in only a few places throughout the world, giving the terroir its minerality, finesse, and incomparable crystalline tonality. La Chablisienne is the leading cooperative of the Chablis appellation, producing wines that are the definitive expression of this ancient and exceptional terroir.
