Winemaking Notes

Keo Commandaria St John is crafted using the Solera system — a meticulous blending method that guarantees a consistent style over time by combining young wine with old, ensuring that every bottle delivers the same rich, intense and harmonious character that defines this celebrated Commandaria. After the overripe Mavro and Xynisteri grapes are harvested, they are left to dry in the sun until the water evaporates and the sugar is concentrated inside the berries — a traditional method of extraordinary antiquity. The grapes are then pressed and the resulting syrup-like juice is left to ferment naturally in traditional wooden vats, before the wine ages in old oak barrels in KEO’s isothermic cellars — a production process that honours the ancient traditions of Commandaria winemaking whilst ensuring the outstanding quality and consistency that define Keo St John.

Vintage Conditions

Commandaria St John is vinified from Cyprus’s ancient and indigenous grape varieties Mavro and Xynisteri, sourced exclusively from the fourteen privileged villages of the Commandaria Appellation of Origin on the eastern slopes of the Troodos mountains. The grapes grow in volcanic soils that are poor and thin — producing a low yield of exceptional quality and concentration that is ideally suited to the production of a wine of outstanding richness and intensity. Named Commandaria by the Knights of St John who made it famous throughout the kingdoms of Europe during the Crusades, this is one of the oldest named wines in the world — a wine of extraordinary historic provenance, ancient grape varieties and a terroir of unique and irreplaceable character that has been producing wines of unsurpassed richness for thousands of years.
