Josef Chromy Brut Finesse 2019 has a lovely pale straw hue, emitting refined and intricate scents. A blend of mineral elements, sea mist, and oyster shells intermingled with ripe pear and quince flavors. Through an extended period of yeast aging, nuanced undertones of freshly baked sourdough, marzipan, brioche and toasted pine nuts arise. The palate is focused and savory, with a distinct salty and briny character complementing the rich body while fine tension and a chalky texture bring balance. The finish is long and precise with a burst of refreshing juicy citrus. Brut Finesse 2019 embodies finesse, complexity, and elegance.

The Josef Chromy vintage sparkling wines aim to showcase the pinnacle of their sparkling fruit, as well as the essence of the specific year and season in which they are made.

Following the traditional method, each variety is picked separately at optimal conditions, whole-bunch pressed and fermented slowly at cool temperatures. The resulting wines are left to settle on lees for several months, before being racked-off and combined to form the final vintage blend.

The resulting base wine is then bottled and set off to it’s second fermentation and aging journey, where fine mousse is formed, as well as complexing autolytic characters from long aging on yeast lees.

Tirage age: 42 months, Disgorged: May 2023

Cellaring Potential: The wine is very tightly coiled, with the goal of retaining intrinsic, nervy tension and power, allowing for favourable complexity to develop slowly under cork. This wine will reward patience.

Serving Suggestions: Excellent pairing to appetisers like white anchovies, Sicilian olives and prosciutto or richer dishes like fried chicken, grilled seafood or aged Comte cheese.
