Distillery Info

Jack Daniel's Old No.7 follows a meticulous production process that has remained largely unchanged since 1866. The whiskey begins with a carefully selected grain mash of 80% maize, 12% malted barley, and 8% rye, which is fermented using the distillery's proprietary yeast strain. After distillation, the spirit undergoes the distinctive Lincoln County Process—a labour-intensive method where the new-make whiskey is slowly filtered through 10 feet of sugar maple charcoal before entering the barrel. This charcoal mellowing removes impurities and imparts a characteristic smoothness. The whiskey is then matured in new, heavily charred American white oak barrels in the Tennessee hills, where temperature fluctuations encourage interaction between spirit and wood, developing its signature vanilla and caramel notes.
