This charcoal mellowing removes impurities and imparts a characteristic smoothness. The whiskey is then matured in new, heavily charred American white oak barrels in the Tennessee hills, where temperature fluctuations encourage interaction between spirit and wood, developing its signature vanilla and caramel notes.
