Winemaking Notes
Cabernet Sauvignon grapes are sourced from several select vineyard sites located in the Wilyabrup sub-region and north to Wildwood Road in an endeavour to capture ripe fruit flavours, supple tannins, and the distinctive perfume of Margaret River Cabernet Sauvignon. The individual vineyard blocks are vinified separately to preserve their unique characteristics. After fermentation on skins, the malolactic fermentation is conducted in tank prior to barrel maturation. The wine is then matured in French oak for 18 months, allowing for the thorough integration of oak and fruit tannins whilst developing complexity and structure.
Vintage Conditions & Terroir
The 2023 vintage in Margaret River benefited from ideal growing conditions that allowed the Cabernet Sauvignon to achieve optimal ripeness whilst retaining natural acidity and varietal expression. The Wilyabrup sub-region, renowned for its gravelly loam soils and maritime influence, provides the perfect terroir for producing Cabernet Sauvignon of exceptional quality.
