Winemaking Notes

Elderton Estate Cabernet Sauvignon 2022 is crafted by Jules Ashmead and Brock Harrison with meticulous attention to detail at every stage of production. Ferments are maintained at relatively low temperature to regulate the rate of ferment, with the cap worked during fermentation to build a bold tannin structure to match the abundant and generous fruit profile of the 2022 vintage. Each batch of Cabernet Sauvignon is fermented to dryness whilst still on skins before being pressed off and racked to a combination of new and seasoned French oak barrels for malolactic fermentation and maturation. The final Elderton Estate Cabernet Sauvignon blend is assembled closer to bottling — ensuring the balance of the final blend is precisely right, as is the Elderton tradition.

Vintage Conditions

The 2022 vintage was kind to Elderton, with fruit picked from the Nuriootpa and Craneford vineyards across a relatively cool growing season with only a few minor warm spikes — allowing for a very gradual ripening pattern of exceptional quality and character. As a later ripening variety, Cabernet Sauvignon always requires patience, and although there was a threat of rain as the season progressed, the fruit was held on the vines to achieve the ripeness and flavour spectrum Elderton looks for. Craneford in Eden Valley — at higher altitude and always some of the latest fruit to come in — contributed a cooler dimension of outstanding complexity and freshness. Fruit from 2022 showed wonderful and abundant freshness, making it a pleasure to work with — a vintage of genuine generosity, depth and enduring Elderton Estate Cabernet Sauvignon distinction. New plantings of three clonal selections of Cabernet Sauvignon at the Nuriootpa vineyard are also beginning to show very promising varietal characteristics.
