De Bortoli Pepper & Spice Shiraz 2024 is a concentrated and characterful Rutherglen Shiraz from what promises to be one of the standout vintages of the last ten years — balancing richness, character, and craftsmanship with bursts of flavour from first sip to last. Deep maroon in colour, layered with dark fruit, pepper, and spice on the nose, and delivering a concentrated palate of blue fruits and rich chocolate, supported by coating tannins for a long, textured finish. Vegan and vegetarian friendly.

Appearance

Deep maroon with bright red hues — the rich, concentrated colour of a Rutherglen Shiraz of genuine depth and intensity.

Aroma

Dark fruit aromas are layered with hints of pepper and spice — a bold and expressive bouquet that is immediately compelling and true to the Rutherglen Shiraz character at its best.

Palate

Concentrated and generous — blue fruits and rich chocolate lead a palate of real depth and texture, supported by coating tannins that carry the wine to a long, satisfying finish. A Shiraz of genuine richness and character that rewards both the glass and the cellar.

Pairs With

Herb-basted rotisserie lamb and BBQ T-bone steaks are the perfect match — and this Shiraz will hold its own against both with ease. Also excellent with slow-braised beef, aged hard cheeses, and hearty winter dishes.

Winemaking Notes

Fruit is harvested at optimum flavour ripeness to obtain the desired Shiraz varietal character, then crushed and destemmed into fermentation vats for 7–10 days at approximately 25°C to maximise flavour and colour extraction. The wine then undergoes three months of maturation in a combination of American and French oak, delivering the pepper, spice, and chocolate complexity that define the Pepper & Spice style. Winemaker: Roberto Delgado. Alcohol: 14.99% ABV. pH: 3.56. TA: 6.63 g/L.

Vintage Conditions

Rutherglen experienced a wetter than average spring with mild and consistent temperatures — ideal growing conditions in which the vines flourished. These conditions continued through December and January without any extreme events, with the season starting one week earlier than average. All whites came in disease-free with good varietal flavours thanks to the cooler conditions. From February, there was no significant rainfall and temperatures stayed consistently warmer than average. As the season progressed and the vineyards dried out, the red grapes became more concentrated and intense whilst maintaining their freshness — all reds were picked in optimal condition. The 2024 vintage promises to be one of the standout vintages of the last ten years.
