Chandon Sparkling Pinot Noir Shiraz NV is a vibrant Australian sparkling red from cool climate Victorian sites — approximately 70% Pinot Noir from the Green Point vineyard in the Yarra Valley and Strathbogie, blended with 30% Shiraz from Heathcote, the Yarra Valley, and the Pyrenees. Deep ruby-red with a persistent fine bead; dark cherry, blackberry, and sweet spice on the nose; full-bodied and flavourful on the palate with a creamy mousse, fine chalky tannins, and a bright, long, savoury finish.

Appearance

Deep ruby-red with vibrant crimson hues and a persistent stream of fine bubbles — the rich, inviting colour of a cool climate Victorian sparkling red crafted from hand punch-down fermented Pinot Noir and Shiraz, with the depth and intensity that open-top fermentation and careful skin contact deliver.

Aroma

Ripe cherries, blackberries, blackcurrants, and sweet blueberries — with alluring notes of sweet spices including liquorice, cinnamon, and cloves adding complexity and warmth. The enticing, layered bouquet of 15 individual red wine cuvées assembled from Yarra Valley, Heathcote, and Pyrenees fruit at its most expressive.

Palate

Full-bodied and flavourful — the prise de mousse contributing a soft, creamy texture and weight to the mid-palate, whilst fine chalky tannins provide structure and length. Winemaking Notes

Pinot Noir (approximately 70%) sourced from the Green Point vineyard in the Yarra Valley and Strathbogie; Shiraz (approximately 30%) from dedicated growers in Heathcote, the Yarra Valley, and the Pyrenees. Grapes picked at 12.5–13° baumé, crushed and fermented separately in open-top fermenters, gently punched down by hand up to six times a day to extract colour from the skins. After initial fermentation the wine was racked to stainless steel for malolactic fermentation, with some batches stored briefly in seasoned oak barrels to retain fresh varietal flavours and a soft, smooth tannin structure. The final blend was assembled from approximately 15 individual red wine cuvées from the current vintage and a small amount of one to two year old reserve wines. Second fermentation in bottle with a specially selected yeast strain, aged on lees for 12 to 18 months, then disgorged. A final dosage was added to fine-tune structure and balance, sealed under cork, and aged in bottle for a minimum of three months before release.

Chandon Australia was established in the Yarra Valley in 1986 by Moët Hennessy — the first venture by the world’s most celebrated Champagne house outside of France, and a statement of belief in Victoria’s cool climate regions as some of the world’s finest sites for traditional method sparkling wine.
