Winemaking Notes

Chambers Rosewood Vineyards Rutherglen Muscat is crafted from fruit harvested at higher Baumé levels of 16° Bé and above — ensuring the exceptional sweetness, concentration and varietal intensity that define this celebrated entry-level Muscat. After de-stemming, the must and recovered raisins are placed into tank for a partial fermentation of 2° to 3° Bé, with the initial 24 to 72 hours often seeing an increase in Baumé due to sugar liberation from raisin rehydration — enabling a longer fermentation that adds colour and complexity to the wine. Once the desired sugar level has been fermented, the must is pressed and the fermenting juice fortified with neutral grape spirit (SVR, ~96% alcohol) to 16% alcohol to arrest fermentation — preserving the primary fruit expression of the variety. The wine is settled, racked, cross-flow filtered and adjusted to 18% alcohol before transfer to old large casks of 900 to 5,000 litres for ageing. Individual vintages and vineyards are kept as separate wines until blending, with bench trials conducted before the final blend is selected, filtered and returned to cask until bottled on demand to ensure the best product possible.
