The Story
Antagonist Spirits was born from a creative collision — a project many years, disagreements, and incarnations in the making, brought to life by three very different personalities: the creative, the entrepreneur, and the businessman (the mediator of the aforementioned). It is this productive tension — the antagonism between different visions, different instincts, and different ideas about what a craft spirit should be — that gives the distillery its name and its character. The best ideas, after all, are rarely born from consensus.

Antagonist Spirits Hard Cut Gin 700mL — 43% ABV
The Hard Cut Gin is one of the most genuinely original and conceptually daring gins produced in Australia — a spirit inspired by the act of harvesting grass, and built around one of the most unexpected and distinctive botanical ingredients in the craft gin world: fresh-cut kikuyu grass (Pennisetum clandestinum).
The process is as meticulous as it is extraordinary. Fresh kikuyu grass stems are hand-harvested — literally stem by stem — at the precise moment of optimal flavour development, between 10 and 17 centimetres in height. The harvested grass is rushed to the production line within approximately five hours of being picked, ensuring that the fresh, vibrant, green character of the grass is captured at its most vivid and expressive. The spirit then undergoes a soft mellowing period on the grass, allowing the more buttery, rounded textures to develop and integrate before distillation.
The result is a gin of extraordinary freshness and originality — a double juniper backbone providing the essential gin character, with soft hints of coriander seed (Coriandrum sativum), orris root (Iris pallida), angelica root (Angelica archangelica), and dehydrated orange peel completing the botanical profile. The fresh-cut kikuyu grass imparts a distinctive green, herbaceous, and buttery character that is unlike any other gin botanical — a spirit that is, in the words of its creators, spring in a bottle.

Antagonist Sun Baked Sundae Spiced Rum 700mL — 40% ABV
The Sun Baked Sundae is Antagonist's debut spiced rum — and it is as original and unexpected as everything else the distillery produces. Built around the flavours of a sun-drenched dessert, the Sun Baked Sundae combines roasted mango and toasted macadamia nuts to create a spiced rum of unique, dessert-inspired, all-natural flavour that is genuinely unlike any other rum on the market. The philosophy is simple but powerful: creating complexity through simplicity — allowing a small number of carefully chosen, high-quality natural ingredients to speak for themselves without the artificial flavourings or additives that characterise many commercial spiced rums.
The roasted mango brings a rich, tropical sweetness and depth that is distinctly Australian in character, while the toasted macadamia adds a warm, nutty richness and a buttery texture that gives the rum its distinctive dessert-inspired personality. How to Enjoy Antagonist Spirits
The Hard Cut Gin is best served at 4–6°C in a copa glass over ice with premium tonic water (50mL gin to 150mL tonic), a slice of cucumber, and a sprig of fresh mint to complement the gin's vibrant green, herbaceous character. For a classic Martini, combine 60mL Hard Cut with 10mL dry vermouth, stir over ice, and strain into a chilled Martini glass with a lemon twist.
