The parcels of Sauvignon Blanc fruit for the Drift Sauvignon Blanc 2019 vintage were fermented individually, with a long cool fermentation in stainless steel tanks ensuring optimal fruit characteristics were captured and maintained. Post fermentation the wines were racked off fine lees and left to settle. After a lengthy blending session to determine the ultimate blend, the wine was stabilised, filtered and bottled. Winery Notes
