Winemaking Notes

The Chardonnay and Pinot Noir are picked in the cool of the night to help retain freshness, with the Pinot handled oxidatively to help lower the red colour pigments. Both are fermented warm to add complexity and mouthfeel. The blend is then run through a secondary fermentation in tank using the Charmat method to add the bubbles and creamy texture. This process preserves the fresh fruit character whilst developing the characteristic buttered toast and rising dough notes that add sophistication to the wine.

Jean Pierre Brut Sparkling is a non-vintage blend, created from wines sourced from multiple vintages across South Eastern regions of Australia. This multi-vintage approach allows the winemaker to achieve consistent quality and style, blending wines from different years to create optimal balance and complexity.
