Winemaking Notes

Grapes sourced from blocks of east-west orientated rows on our Maroondah Highway vineyard. Hand-picked and sorted, the fruit was de-stemmed, crushed, and tipped directly to small open vats. A considered amount of stalks were added back to complement aroma, complexity, and tannin. Fermentation and cuvaison was conducted for 14 to 21 days with the ferment temperature reaching 32°C. Vats were hand-plunged or pumped-over a maximum of once per day. The wine underwent 22 months of oak maturation, allowing the fruit and oak to integrate harmoniously whilst developing complexity and structure.

Vintage Conditions

The 2022 vintage in the Yarra Valley provided ideal conditions for Cabernet Sauvignon production. The growing season featured moderate temperatures and well-distributed rainfall, allowing the fruit to achieve full phenolic ripeness whilst retaining natural acidity. Cool nights preserved the wine's signature aromatics and freshness, whilst warm days ensured optimal flavour development. These conditions resulted in wines of exceptional balance, concentration, and ageing potential, showcasing the Yarra Valley's ability to produce world-class Cabernet Sauvignon.
