Winemaking Notes
Fruit for the De Bortoli King Valley Prosecco Rosé is harvested in the cool of the night to achieve a balance of freshness and acidity, preserving the delicate aromatics and vibrant character that define this wine. The wine is pressed and racked to stainless steel vats for fermentation, with temperature control ensuring the retention of the wild strawberry and pomegranate fruit characters. The wine is carefully blended and the all-important secondary fermentation begins that gives the final bubbles, employing the Charmat method that is traditional for Prosecco production. This second fermentation gives creaminess and texture to the blend, developing the gentle creamy flavours and subtle brioche notes that complement the fresh fruit character, before it is transferred under pressure, complete with bubbles, to bottle. This careful approach to winemaking, from night harvesting through to the secondary fermentation, ensures the wine maintains its lovely pale rosé colour, fine bubbles, and the fresh-as-a-daisy character that makes it very drinkable. The style is gentle and easy, making this the ideal summer sparkler, perfect on its own or mixed with an apéritif and soda water for a lively and refreshing spritz.

Vintage Conditions
The King Valley is Australia's natural home for Prosecco, with De Bortoli and many of the grape growing families in the region having originated from Northern Italy where the Prosecco grape is indigenous. This deep connection to the variety's homeland ensures an authentic approach to Prosecco production, with generations of knowledge and expertise applied to the unique terroir of the King Valley. Across the globe, Prosecco has taken the world by storm, and the King Valley's cool-climate conditions provide the perfect environment for producing Prosecco of exceptional quality and character. The region's moderate temperatures and extended ripening periods allow the fruit to develop optimal flavour whilst retaining the natural acidity essential for fresh, lively sparkling wine production. The cool nights in the King Valley are particularly important for preserving the delicate aromatics and vibrant fruit character, allowing the grapes to be harvested at the perfect moment to achieve the balance of freshness and acidity that defines this wine. The combination of Italian heritage, ideal cool-climate conditions, and careful winemaking results in a Prosecco Rosé that is light and fragrant with notes of brioche, wild strawberry, and pomegranate, showcasing the King Valley's position as Australia's premier region for Prosecco production.
