Fruit for the De Bortoli King Valley Prosecco Rosé is harvested in the cool of the night to achieve a balance of freshness and acidity, preserving the delicate aromatics and vibrant character that define this wine. The wine is pressed and racked to stainless steel vats for fermentation, with temperature control ensuring the retention of the wild strawberry and pomegranate fruit characters. The wine is carefully blended and the all-important secondary fermentation begins that gives the final bubbles, employing the Charmat method that is traditional for Prosecco production. This second fermentation gives creaminess and texture to the blend, developing the gentle creamy flavours and subtle brioche notes that complement the fresh fruit character, before it is transferred under pressure, complete with bubbles, to bottle. This careful approach to winemaking, from night harvesting through to the secondary fermentation, ensures the wine maintains its lovely pale rosé colour, fine bubbles, and the fresh-as-a-daisy character that makes it very drinkable. The style is gentle and easy, making this the ideal summer sparkler, perfect on its own or mixed with an apéritif and soda water for a lively and refreshing spritz.
