Winemaking
Rock Angel is crafted from grapes primarily sourced from the vineyards of Château d'Esclans, complemented by the most select vineyards in the vicinity of the Esclans Valley and nearby Côtes de Provence region. Harvesting is conducted strategically—in the morning for estate-cultivated grapes and during the night for sourced fruit—to avoid the heat of the day and preserve the crop's freshness.

Upon arrival at the cellars, grapes undergo rigorous sorting for both health and quality through optical eye sorting technology, ensuring only the finest fruit proceeds to vinification. Soft crushing is followed by temperature reduction from approximately 20°C down to 7-8°C, locking in freshness and vivacity. Closed-circuit pressing facilitates minimal oxidation, producing pristine free-run juice which is vinified primarily in 600-litre temperature-controlled oak barrels (demi-muids) alongside stainless steel temperature-controlled fermentation tanks. Bâtonnage is conducted twice weekly over a six-month period prior to bottling, contributing to the wine's distinctive creamy texture and complexity whilst maintaining its elegant character.
