The 2025 Babich Marlborough Sauvignon Blanc is crafted in the estate's signature fuller, riper, softer style that develops beautifully over time. Fruit was sourced from Babich estate vineyards and select growers situated throughout the Marlborough region, each contributing unique characteristics to the final blend. The grapes were picked, crushed, and pressed at perfect ripeness to capture optimal flavour development and aromatic intensity. The juice was fermented in stainless steel tanks at various temperatures, a technique designed to preserve and capture the fresh, vibrant flavours unique to Marlborough Sauvignon Blanc. To build additional palate complexity and textural interest, a small percentage of the wine was fermented wild using indigenous yeasts, adding subtle layers of character and depth. After extensive tastings by the winemaking team to ensure perfect balance and expression, the wine was carefully assembled, lightly fined for clarity, and bottled to preserve its clean, fresh, and tropical character.
