De Bortoli Deen Vat 9 Cabernet Sauvignon 2019

Deen De Bortoli was one of true visionaries of the Australian wine industry. He was at the forefront of innovation and made wine for the people. The Deen Vat Series range is a true reflection and tribute to Deen himself.

Fruit is harvested in the cool of the night to achieve a balance of fruit freshness, structure and ripeness. Upon reception at the winery, the fruit was carefully de-stemmed into our Potter fermenters, where fermentation took place over a 7-8 day period. Pressed off at dryness, the wine was matured in new and older American and French Hogshead barrels for 12 months, whilst 20% was left un-oaked to keep fresh and fruitful to blend with the barrel matured portions.
