Winemaking Notes

Select parcels of Pyrenees Shiraz are nominated in the vineyard and winery for sparkling wine production, chosen for their prominent varietal and regional character, soft tannins, and restrained alcohol. Approximately 5 days of primary fermentation on skins in open fermenters is followed by gentle pressing to tank, then racking off the yeast lees to small and large oak vats for 18 months of oak maturation. Secondary bottle fermentation then occurs before a further 1 to 2 years of bottle maturation — allowing full integration of fruit flavours, tannin, carbon dioxide, and yeasty complexity. Méthode Traditionnelle production has been an integral part of winemaking at Blue Pyrenees for many years.

Vintage Conditions

The Pyrenees grape growing seasons are generally ideal for Shiraz — beginning with winter rains and cool springs and summers, followed by warm autumns that are perfect for ripening red grapes.
