Using red wine barrels to mature their whisky, with all their whisky ingredients sourced from within a day's drive away. Utilising the wildly varied Melbourne weather, their whisky draws out its signature fruity, delicious flavour in just three short years. Affectionately named this elemental maturation and it's why they believe they couldn't make their whisky anywhere else.
