Collection: Sato Wines | Mount Pisa, Central Otago

Sato Wines is one of New Zealand’s most quietly celebrated natural wine estates. Founded in 2009 by Yoshiaki and Kyoko Sato, the estate — La Ferme de Sato — sits in Mount Pisa, Central Otago, where schist and alluvial soils and a cool continental climate provide the foundation for wines of genuine transparency and place.

The Satos farm certified organic and biodynamic vines with zero synthetic chemicals, and bring the same discipline into the winery: wild fermentations, no commercial yeasts, no additives, minimal or no sulphur at bottling. Production is highly limited. Every wine is a direct expression of the vintage and the site.

Pinot Noir is the heart of the range. Sur Les Nuages and Les Violettes are celebrated for elegance, fine texture and aromatic depth — Pinot Noir that rewards patience and attention. Alongside these, Sato produces Chardonnay, Chenin Blanc, Gamay, Riesling and Cabernet Franc in small batches, each variety chosen for what it reveals about Central Otago’s distinctive soils and climate.

These are wines for collectors and natural wine enthusiasts who understand that restraint and precision are not the same as simplicity.
