The Name

‘Mollydooker’ is old Australian slang for a left-handed person — and it is a fitting tribute to Sarah Marquis, the left-handed Chief Winemaker and Owner whose vision, talent, and determination have driven the winery from its earliest days. The name captures the spirit of the brand perfectly: irreverent, distinctly Australian, and proudly different from the crowd.

History & Philosophy

Mollydooker was established in McLaren Vale with a clear and uncompromising vision: to produce wines of the highest possible fruit quality, with a signature style of richness, generosity, and flavour intensity that would set them apart from everything else in the Australian wine market. The winery's philosophy is built on the belief that great wine begins in the vineyard — and that the key to producing wines of extraordinary fruit quality lies in the meticulous management of the vines and their environment.

Central to the Mollydooker winemaking philosophy is the Marquis Vineyard Watering Program — a proprietary and innovative technique developed by the Marquis family that involves the precise and carefully managed application of water to the vineyards at critical points in the growing season. Rather than allowing vines to experience the stress of water deficit — the conventional wisdom in premium viticulture — the Marquis Vineyard Watering Program maintains optimal vine hydration throughout the season, allowing the grapes to develop to their full potential in terms of flavour concentration, colour, and aromatic complexity. The result is wines of extraordinary richness and fruit intensity that are the hallmark of the Mollydooker style.

Mollydooker's winemaking is equally distinctive. The wines are barrel fermented and matured predominantly in American oak — a deliberate choice that imparts the characteristic vanilla, mocha, and toasted oak notes that complement the wines' extraordinary fruit concentration. The use of multiple vineyard sources — up to twelve premium sites across McLaren Vale and Langhorne Creek for the flagship Boxer Shiraz — allows the winemaking team to select only the finest parcels in any given year, ensuring that the Mollydooker style is maintained with extraordinary consistency across every release.

The Regions: McLaren Vale & Langhorne Creek

McLaren Vale is one of Australia's most celebrated and distinctive wine regions — a compact, diverse, and extraordinarily beautiful area on the Fleurieu Peninsula, approximately 40 kilometres south of Adelaide, bounded by the Mount Lofty Ranges to the east and the Gulf St Vincent to the west. The region's Mediterranean climate — warm, dry summers and mild, wet winters — is moderated by afternoon sea breezes from the Gulf St Vincent, and its ancient, diverse soils — from the red-brown earths and ironstone gravels of the higher sites to the sandy loams of the valley floor — produce wines of remarkable richness, depth, and complexity. McLaren Vale Shiraz is celebrated for its characteristic dark fruit, chocolate, and earth, with a velvety, plush texture that is the signature of the regional style.

Mollydooker sources fruit from a number of distinguished McLaren Vale vineyard sites, including Coppermine Road, Martins Road, Long Gully Road, Gateway, Seaview Road, Mongrel Hill, Aldinga Road, Ryan Road, Birchmore, and Hawthorn Ridge — each contributing its own distinctive character to the final blends.

Langhorne Creek, located on the shores of Lake Alexandrina approximately 70 kilometres southeast of Adelaide, is one of South Australia's most important and underrated wine regions. The region's deep alluvial soils — deposited over millennia by the Bremer and Angas Rivers — and its cool, lake-moderated climate produce Shiraz of extraordinary depth, colour, and concentration. Mollydooker sources fruit from the Joppich and Semmens vineyards in Langhorne Creek, whose contribution adds an additional layer of richness and structural complexity to the McLaren Vale fruit.

Mollydooker The Boxer Shiraz — McLaren Vale & Langhorne Creek — The entry point to the Mollydooker range and one of Australia's most popular and celebrated everyday Shirazes. Sourced from twelve premium vineyard sites across McLaren Vale and Langhorne Creek — including Home Blocks, Reedy Creek, Seaview Road, Mongrel Hill, Coppermine Road, Aldinga Road, Ryan Road, Birchmore, Hawthorn Ridge, Joppich, Semmens, and Blue Vineyard — and matured in 100% American oak (38% new, 49% one-year-old, 13% two-year-old). Deep inky purple with aromas of dark fruit, black cherries, mocha, and clove spice. Fresh plum on the palate with balanced tannins and toasted oak, finishing long and satisfying with lingering dark fruit and mocha. Outstanding with slow-roasted beef, BBQ ribs, lamb shanks, and rich tomato-based pasta.

Mollydooker Blue Eyed Boy Shiraz — McLaren Vale & Langhorne Creek — A step up in concentration and intensity from The Boxer, sourced from a more tightly selected group of McLaren Vale vineyards (Coppermine Road, Gateway, Long Gully Road, and Mollydooker Home) and the Joppich vineyard in Langhorne Creek. Matured in 100% American oak (54% new, 46% one-year-old). Bursting with fresh berries and hints of mocha, with a balance of strength and finesse and a smooth, enduring finish. A wine of genuine depth and character that rewards those who seek more from their Shiraz.

Mollydooker Maître D’ Cabernet Sauvignon — McLaren Vale — Mollydooker's Cabernet Sauvignon expression, sourced from three distinguished McLaren Vale vineyard sites — Coppermine Road, Martins Road, and Long Gully Road — and matured in a blend of 83% American oak and 17% French oak (34% new, 51% one-year-old, 15% two-year-old). Deep red and purple hues. Notes of cherry and blackberry followed by hints of liquorice, cigar box, and mocha, with a dimension of fruit sweetness that is the hallmark of the Mollydooker style. A Cabernet of genuine complexity and character.

How to Enjoy Mollydooker Wines

All Mollydooker wines are best served at 16–18°C in a generous red wine glass. The Boxer is approachable upon release and pairs beautifully with a wide range of food — from a weekend barbecue to a slow-cooked lamb shank. The Blue Eyed Boy rewards decanting for 30–45 minutes to open its full aromatic complexity and is outstanding with richer, more flavourful dishes.
