Bright, intense pale straw — the fresh, luminous colour of a pure, focused Mornington Peninsula Chardonnay from Yabby Lake’s Red Claw range, with the clarity and precision that whole bunch pressing, natural yeast fermentation, and lees ageing deliver.

Aroma

Lifted and pure — clean citrus notes and stone fruit with a subtle hint of spicy French oak, the fresh, focused, and characterfully Mornington bouquet of a Chardonnay fermented in 500L puncheons with no malolactic fermentation and all natural yeast.

Palate

Tightly focused and beautifully balanced — citrus, stone fruit, and spicy French oak, with the intensity and precision of a Mornington Peninsula Chardonnay grown in the warm, extended conditions of the 2025 season and aged on yeast lees for complexity and texture.

Pairs With

A natural companion for grilled lobster, pan-seared scallops, roast chicken, creamy pasta, and soft washed-rind cheeses — equally rewarding now and will develop further complexity over the next 3–4 years.

Winemaking Notes

Hand harvested between 22 February and 8 March 2025, whole bunch pressed in small batches, and left to settle overnight before fermentation in 500L French oak puncheons with all natural yeast — no malolactic fermentation. The wine was aged on yeast lees and estate bottled in late August 2025. A winemaking approach that preserves the purity, focus, and fine texture that define Yabby Lake Red Claw Chardonnay.

Vintage Conditions

The 2025 season on the Mornington Peninsula saw a welcomed return of warm and extended summer conditions — producing full-flavoured wines with impeccable intensity and balance. A vintage that delivered everything the Red Claw Chardonnay style demands: purity, focus, and the fine, complex character that only a great Mornington Peninsula growing season can provide.
