Valdo Valdobbiadene Prosecco Superiore DOCG is crafted exclusively from Glera grapes grown in the prestigious Valdobbiadene production area, at altitudes ranging from 200 to 400 metres above sea level. This elevation provides ideal growing conditions, with cooler temperatures that preserve the grapes' natural acidity and delicate aromatics. The winemaking process begins with soft pressing to extract only the finest juice, followed by fermentation with carefully selected yeasts at controlled temperatures to maintain the wine's fresh, fruity character. The sparkling process employs the Charmat method, with three months of refinement in autoclave (pressurised tanks) where the secondary fermentation occurs, developing the wine's characteristic fine bubbles and elegant effervescence. Following this, the wine undergoes an additional two months of bottle refinement, allowing the flavours to integrate and the perlage to achieve its signature persistence. The result is a beautifully balanced Prosecco Superiore DOCG with 11% alcohol by volume, showcasing the purity and elegance that has made Valdo's Marca Oro range recognised worldwide.
Vintage Conditions
The Valdobbiadene region's unique terroir, characterised by its hillside vineyards and favourable microclimate, provides exceptional conditions for Glera cultivation year after year. The altitude of 200 to 400 metres above sea level creates significant diurnal temperature variation, allowing the grapes to develop concentrated aromatics whilst retaining vibrant natural acidity. This elevation also ensures excellent drainage and sun exposure across the rolling hills, contributing to optimal ripeness and varietal expression. The cool nights preserve the delicate fruity aromas of wild apple, Golden Delicious, acacia flowers, and honey that define this iconic Prosecco. To fully appreciate the wine's qualities, gradual cooling in the refrigerator is recommended, avoiding excessive temperature changes that might compromise the delicate bubbles. The flute glass is most suitable for service, presented at 6-7°C to showcase the wine's fine perlage, fresh fruit character, and elegant structure.
