Working to the strengths of Pinot Gris, the wine was fermented on full solids, partly in old French oak puncheons and partly in stainless steel, ensuring the lively aromas of white pear, almond sorbet, and jasmine are complemented by the juicy nashi and fleshy white pear that offer a delicious and textured palate. The wine was then allowed to rest on lees for four months to build texture, complexity, and drive through the palate, with the added zip of cool season acidity creating exceptional freshness and balance.
