Consisting of Cinsaut, Mataro and Chenin Blanc, each parcel of fruit was kept separate and berries were crushed and pressed off skin immediately. The juice was then cold settled and racked before fermentation commenced. The final blend was assembled from the various components to create this stunning wine. No sulphur dioxide has been added to this wine at any point during winemaking or bottling, resulting in a pure expression of organic fruit. The immediate pressing preserves the delicate colour and fresh fruit aromatics, whilst cold settling ensures clarity and aromatic purity. This minimal intervention approach showcases the quality of the certified organic fruit and creates a rosé with exceptional freshness and textured mouthfeel.
