This distinguished Heathcote Shiraz presents an inky burgundy colour with striking pink hues and brilliant depth, displaying the exceptional quality characteristic of Heathcote fruit from five vineyards on the Mt Camel range.

Aroma

The nose reveals black mulberries and sweet rhubarb aromas combining with hints of hoisin spiced sauce and a touch of coconut husk. Hints of graphite and a touch of citrus complete the complex and layered bouquet.

Palate

Medium to full bodied with abundant red and blue berry flavours, supportive oak and substantial fine tannins delivering good length. Complex and lively, the finish lingers with dark fruit and a subtle spice, reflecting the depth and character of Heathcote's ancient Cambrian soils.

Winemaking Notes

Tar & Roses Shiraz 2025 is sourced from 97% Heathcote and 3% Yarra Valley, with fruit from five vineyards on the Mt Camel range stretching from near Tooleen to Corop. The machine harvested fruit was crushed and destemmed into stainless steel fermenters and pumped over twice a day. After approximately 10 days of fermentation, during which time temperature and acid levels were monitored, the parcels were individually pressed to tank using an air bag press. The wine was racked off gross lees and matured in a combination of newer French and older barriques, with approximately 10% new French oak and the remainder in older seasoned oak. Technical details: Alcohol 14.8% · pH 3.65 · Acid 5.7 g/L · Sugar <1.0 g/L.

Vintage Conditions

Heathcote is one of Victoria's most distinctive wine regions, stretching from Tooborac to Colbinabbin across several subregions with assorted altitudes, sites and microclimates that create a fascinating tapestry of wine styles. A defining feature of the region is its ancient Cambrian soils — calcium-rich material hugging the Mount Ida and Mount Camel Ranges that, much like the terra rossa of Coonawarra, produces intensely coloured and flavoured wines with the structure to reward cellaring. Heathcote experiences warm days and cool nights across the harvest season, with the north running hotter and the south cooler, allowing diverse varieties to thrive. It is from the Mt Camel range that Tar & Roses sources fruit across five vineyards, where these ancient soils and the region's signature diurnal temperature variation are directly responsible for the inky depth, abundant berry fruit and substantial fine tannins that define this 2025 Shiraz.
