Winemaking Notes
The 2024 vintage was carefully crafted using traditional techniques combined with modern precision. Grapes were crushed, de-stemmed, and pressed to tanks before undergoing a controlled fermentation at 13Β°C for 14 days, preserving the wine's delicate aromatics and vibrant fruit character. Extended lees contact over four months added textural complexity and depth, whilst 10% of the blend was fermented wild in older French barriques, contributing subtle nuance and structure without overwhelming the wine's pure varietal expression.

The 2024 growing season on the Bellarine Peninsula delivered ideal conditions for Sauvignon Blanc, with cool maritime influences ensuring balanced ripening and excellent natural acidity.
