Winemaking Notes

Rymill Coonawarra Classic Shiraz is sourced from select blocks of Shiraz within Rymill’s Riddoch Run vineyard — planted between 1975 and 1989 at the warmer, northern end of the Coonawarra strip. The fruit is destemmed to 5-tonne open fermenters and spent 8–10 days on skins before being pressed to tank at 0.5–1.5 Baumé, racked off ferment lees once sugar and malic are dry, and matured for 18 months in 25% new, primarily French oak — with a couple of new American oak barrels included for sweet spice and vanilla characters. Blended after 18 months in barrel, then filtered before bottling by winemaker Lewis White. Alcohol 14.9%.
