Winemaking Notes

Fermented in open fermenters with partial whole-bunch inclusion — a technique that adds spice, texture, and structural complexity to the wine. Maceration varies between seven and twenty-one days depending on the parcel, allowing the winemaking team to tailor extraction to the character of each vineyard site. A short maturation in French oak barrels, twenty per cent new, delivers the gentle oak influence that frames the fruit without dominating it. Winemakers: Larry Cherubino and Debbie Lauritz.
