Straight is always a start, but with a little time on our hands and an opportunity to experience this gin with a little more flair try the No.4 Gibson Recipe from Four Pillars. It's made for this style of Martini and happens to be Cameron Mackenzie's favourite. With the addition of cocktail onions and a little dry sherry.

"Pretty much, I’m not a huge fan of Four Pillars gin, though this is very good.

Well, strangely, very olive martini-like in flavour, all the bay leaf, lemon zest and subtle juniper hit. It’s smooth and a bit boozy, but seems made for martinis, which is good, and while it’s a bit hot, it’s flavoursome and ripe and zesty. I like it. A heady brew, made for the Martini, and so much so, you’d likely need only one olive. No more. Hello. Excellent."

Things you will need:
- 60mL Four Pillars Olive Leaf Gin
- 10mL dry vermouth
- 10mL fino sherry
- Cocktail onions

Stir the Olive Leaf Gin, dry vermouth and sherry in a mixing glass over ice (add a little onion brine if you like).
Strain into a frozen cocktail glass.
Serve with a side dish of Sicilian olives.

Olive Leaf Gin is their new savoury gin, five delicious years in the making. It’s textural, bright and perfect for a Martini or Gintonic. Three types of cold-pressed extra virgin olive oil and olive leaf from the world-class groves of Victoria's Cobram Estate have been used. Botanicals like rosemary and bay leaf transport you to the Mediterranean (even though they're from Cam’s garden), while native macadamia nuts and lemon myrtle make the gin distinctly modern Australian.

This gin even though it has just been released has already won gold at one of the world's top spirits competitions, even before we could release this gin to the world!
