Dolin Rouge Vermouth de Chambéry is one of the great classics of the style — a lustrous coppery Vermouth of extraordinary aromatic richness, crafted from the maceration of no less than thirty Alpine plants, flowers, and spices in white wine, following an unchanged recipe that has been jealously guarded since the 1820s. Fruit compote, prunes, and walnuts with grassy notes; almond, citrus, pear, and cinnamon with gingerbread, tobacco, and oregano; black pepper spice tempered by a subtle bitter base wine. Star of Parisian café terraces in the 19th century, winner of many prizes, and unchanged for 200 years.
Tasting Notes
Appearance
Lustrous coppery red — the rich, warm colour of a classic Vermouth Rouge de Chambéry, reflecting the depth and complexity of thirty Alpine botanicals macerated in white wine following Dolin’s unchanged recipe since the 1820s.
Aroma
Extraordinarily rich and complex — fruit compote, prunes, and walnuts with gentle grassy notes lead the bouquet, joined by spicy aromas of black pepper that add warmth and intrigue. Almond, citrus, pear, and cinnamon develop with gingerbread, tobacco, and oregano notes, creating an aromatic profile of remarkable depth and genuine Alpine Vermouth character. The subtle bitter base wine tempers the richness beautifully.
Palate
Very rich and deeply layered — the full complexity of the nose carries through on the palate, with fruit compote, prune, walnut, and spice balanced by the subtle bitter base wine and the freshness of Alpine botanicals. A Vermouth of exceptional length and balance, equally compelling as an apéritif and as a cocktail ingredient.
Pairs With
Dolin Rouge is the essential ingredient in a classic Negroni, a Manhattan, or an Americano — equally superb served chilled over ice with a twist of orange as a standalone apéritif. Pairs beautifully with charcuterie, aged cheeses, dark chocolate, and bitter orange confectionery.
Who Should Drink This?
Dolin Rouge is for lovers of rich, complex sweet Vermouth — cocktail enthusiasts who want the depth and authenticity of a 200-year-old Alpine recipe in their Negroni or Manhattan, and apéritif drinkers who appreciate the extraordinary aromatic richness that thirty botanicals and an unchanged recipe deliver. If you’ve only ever used supermarket Vermouth in your cocktails, Dolin Rouge will change everything.
Why Is Dolin Rouge Famous?
Dolin Rouge has a very long history — awarded with many prizes and accolades since its creation in the 1820s, and unchanged in recipe for 200 years. As the only producer to hold the Vermouth de Chambéry geographical indication, Dolin crafts Vermouth of a lightness, freshness, and botanical complexity that sets it apart from Italian counterparts. French Vermouth, which had its heyday in the 1850s, is back in style in the 21st century — and Dolin Rouge is leading the revival.
How Should I Use It?
Dolin Rouge is the essential sweet Vermouth for a classic Negroni (1:1:1 gin, Campari, Vermouth), a Manhattan (2:1 rye or bourbon to Vermouth), or an Americano (Campari, Vermouth, soda). As an apéritif, serve chilled over ice with a twist of orange or a maraschino cherry. Once opened, store in the refrigerator and consume within 4–6 weeks for the best flavour.
What’s Similar?
Fans of Dolin Rouge may also enjoy Carpano Antica Formula for a richer, more intensely complex Italian sweet Vermouth, or Martini Rosso for a lighter, more accessible alternative. Within the Dolin range, the Dolin Dry and Dolin Blanc offer equally celebrated expressions of the Chambéry appellation in dry and off-dry styles.
