Philosophy
De Bortoli is a family-owned winery committed to expressing the full diversity of Australian wine regions. From the Riverina to the Yarra Valley and King Valley, the De Bortoli philosophy centres on matching variety and style to place — producing wines that are honest expressions of their origin, from everyday drinking to benchmark fine wine.
Winemaking
De Bortoli has been making wine since 1928, when Vittorio and Giuseppina De Bortoli arrived from northern Italy and planted vines in Bilbul in the Riverina. Four generations later, the family remains independently owned, with the third and fourth generations — including Darren, Victor and Kevin De Bortoli, alongside winemaker Steve Webber and Leanne De Bortoli in the Yarra Valley — actively leading different parts of the business.
The winery operates across two distinct climatic extremes. In the warm Riverina, production centres on approachable everyday wines and the winery's most celebrated creation — Noble One Botrytis Semillon, first made by Darren De Bortoli in 1982 and now one of Australia's most internationally recognised and awarded wines. In the cool-climate Yarra Valley at Dixons Creek, the focus shifts to terroir-driven Pinot Noir, Chardonnay and Shiraz, with the Estate Grown and Melba Vineyard tiers representing the pinnacle of the range. Strategic plantings in Heathcote and King Valley extend the portfolio into Mediterranean varieties including Sangiovese and Prosecco.
Sustainability is central to how De Bortoli farms. The family is certified by Sustainable Winegrowing Australia, has invested significantly in solar energy and water recycling across its operations, and is progressively transitioning to organic and regenerative farming practices — reducing chemical inputs, restoring native vegetation, and establishing wildlife corridors across its vineyards.
The philosophy is straightforward: wine is food, and it should reflect the land, the family, and the table it's served at. From Windy Peak to Noble One, every tier is made with that principle in mind.
