Ad Hoc is an assembly of varietal wines for any occasion, each wine sourced from its best-suited region in Western Australia.

From Margaret River, to Pemberton, to the regions of the Great Southern, we’ve grown up and worked amongst the vines. Our knowledge of these regions and relationships with other grape growers enables us to find the best vineyards for each grape variety, and this is what we show with through Ad Hoc.

We’ve travelled long to find the path of least resistance, enabling us to show you great quality at great value for money.

Ad Hoc are 'go-to', dependable wines for any occasion, as characterful as their labels.

The 2024 growing season was marked by a combination of cool, wet conditions early in the season, followed by a warm, dry finish - ideal for premium wine production. Spring brought cooler-than-usual temperatures, ranging from 14°C to 2i°C, coupled with above-average rainfall. Monthly precipitation during this period was between 90-130 mm, which helped maintain soil moisture levels and supported healthy vine growth. These conditions were conducive to a slightly delayed but even bud-burst and flowering, ensuring uniform fruit set and healthy canopy development, both crucial for optimising grape quality. Moving into the summer months the weather pattern shifted significantly, with temperatures rising to an average of 28°G to 34°C during the day. Rainfall was scarce, averaging only 5-20 mm per month, creating ideal conditions for the ripening period. The dry, warm weather facilitated the gradual development of complex flavours and balanced acidity in the fruit, while the minimal rainfall reduced the risk of disease, contributing to high-quality fruit.

Grapes were selected from various sites across the Great Southern. Great attention to harvest dates along with gentle de-stemming, minimal use of sulphur and using free-run juice from select parcels of fruit ensured the elegance and purity of flavour was maintained.
