The grapes were harvested in late February and March at a range of baumé levels from 11.5 to 13. After removing the alcohol using spinning cone technology the wine was bottled soon after with an alcohol of less than 0.5%. This innovative approach preserves the vibrant aromatics and racy acidity of traditional Sauvignon Blanc whilst delivering an alcohol-free alternative that maintains the wine's essential freshness and food-friendly nature.
