Ingredients (serves 1)

  • 60ml bourbon or rye whisky
  • 10ml sugar syrup (or 1 sugar cube)
  • 2–3 dashes Angostura aromatic bitters

  • Garnish: orange peel (expressed and dropped in, or draped on the rim)
  • Optional: a cocktail cherry

Method

  1. Chill your glass. Place a rocks glass in the freezer for a few minutes, or fill it with ice water while you prepare the drink. A cold glass keeps dilution in check.
  2. Combine. Add the sugar syrup and bitters to your glass (or mixing glass if you prefer to stir and strain).
  3. Add the whisky. Pour in your 60ml of bourbon or rye.
  4. Add ice. One large cube is ideal — it melts slowly, chilling the drink without over-diluting it. If you only have regular cubes, use 2–3.
  5. Stir. Gently stir for about 20–30 seconds. You want the drink cold and slightly diluted — not watery.
  6. Express the orange peel. Hold a strip of orange peel (about 3cm wide) over the glass and give it a firm twist to release the oils. Run it around the rim, then drop it in or drape it over the edge.

Tips for a Better Old Fashioned

  • Use sugar syrup, not a sugar cube. A sugar cube takes forever to dissolve and leaves gritty sweetness at the bottom. Make a batch of sugar syrup — it takes five minutes and makes a real difference to the texture of the drink.
  • Don't muddle fruit. The Wisconsin-style Old Fashioned with muddled orange and cherry is a different drink entirely. Delicious in its own right, but not a classic Old Fashioned.
  • The ice matters. One large cube or sphere is the gold standard. It looks great and melts slowly. Worth investing in a large ice cube tray.
  • Express, don't squeeze. When adding the orange peel, twist it firmly over the glass to release the oils — you should see a fine mist. That citrus oil on the surface of the drink is part of the flavour.
  • Quality spirit is everything. The Old Fashioned has nowhere to hide. Use a whisky you'd happily drink neat.

Bourbon vs Rye: Which Should You Use?

This is the great Old Fashioned debate, and the honest answer is: both are correct, and both are delicious. The choice comes down to personal preference.

Bourbon gives you a sweeter, rounder Old Fashioned — vanilla, caramel, and dark fruit notes that play beautifully with the sugar and bitters. It's the more approachable option and the traditional American choice.

Rye whisky gives you a spicier, drier Old Fashioned — pepper, grain, and herbal notes that cut through the sweetness and add complexity. It's the bartender's choice and arguably the more sophisticated option.
