Firm and fine savoury tannin match well with black cherry and berries on the palate giving this wine its overall savoury profile. Sourced from Heathcote and harvested on the 15th March 2022. Machine picked. Fully de-stemmed and fermented in large format oak fermenters and stainless steel. Over approximately two weeks the ferments were managed by pump overs, rack and returns and working the skins with feet. Pressed on day 15 and put into older oak.
