Building on the award winning recipe of 2022 Christmas cask release (Global Whisky Masters 2023), this year’s release has had a double finish, imparting twice the fruit mince pie flavours into the release.

Born from boundless imagination and an embrace of the unknown, this distinctive sun-kissed single malt dances with candied citrus, a balance of malt flavour fired up with a bittersweet edge. Vivacious and bright, it’s best enjoyed neat or over ice.
Born out of curiosity from a simple question one day back in 1989 when Bill Lark was out fishing for trout in Tassie, whilst consuming a bottle of whisky made by his father-in-law Max “I wonder why there isn’t anyone making malt whisky in Tasmania?”.
Following on from this Bill and his wife Lyn were led down the path of exploration in to Tasmania’s antiquated distillation laws as they attempted to obtain their own distillation license. Their enquiry subsequently lead to the amendment of these laws which had restricted distillation in the state in 1838.
In 1992, the Lark household became the first Australian distillery to produce single malt spirit in 154 years. The spirit continued to grow and evolve, leading to the creation of a rich Tasmanian Single Malt Whisky aged in small casks. Finally in 1998, after years in the making, from Bill and Lyn’s kitchen table to Davey Street Bond Store, the first Lark Distillery Single Malt Whisky was released commercially.
Bill Lark has been honoured with a Lifetime Achievement recognition by the Spirits Business Awards and the whiskies produced at Lark are highly regarded globally and has certainly put Australian Whisky on the map.
