St Hubert’s Chardonnay 2025 is a single vineyard wine from the Yarra Valley floor — a selection of clones led by around 60% Gingin, with most of the balance Bernard 76 and 95, bringing the Gingin clone’s signature pineapple lift alongside nectarine, nashi pear, and delicate white flowers. High solids juice fermented in French oak barriques (19% new), the entire oak maturation spent on yeast lees, with a small portion through malolactic fermentation adding texture and aromatics. Ten months in 100% French oak. Lively and citrus-dominant on the palate — lemon tart and pineapple, tightly wound yet balanced by mid-palate flesh, juicy, restrained, and elegant. A wine that will gain complexity with age.

Bright, luminous pale straw with golden hints — the precise, elegant colour of a single vineyard Yarra Valley floor Chardonnay, with the clarity that high solids fermentation, full lees maturation, and 10 months in French oak deliver.

Aroma

Vibrant and layered — nectarine, nashi pear, and delicate white flowers leading the way, with the Gingin clone’s signature pineapple note bringing a tropical lift. Hints of cashew and nougat from barrel fermentation, with French oak spice offering structure and finesse. A subtle savoury thread adding complexity throughout.

Palate

Lively and citrus-dominant — bright lemon tart and pineapple flowing through a palate that is tightly wound yet balanced by mid-palate flesh that adds roundness and evenness. Juicy, restrained, and elegant, with the fine detail and structure to gain complexity with age.

Pairs With

A mix of destemmed fruit and whole berry pressing employed, with high solids juice fermented in a mixture of new and seasoned French oak barriques (19% new).
