Winery & Vintage Info

A true reflection of provenance, this Pinot Gris is named in honour of Inigo of Loyola who was co-founder of the Jesuit Order whose members built Sevenhill.

Sevenhill cellars collaborated with a reputable grower of Adelaide Hills Pinot Gris, to supply them with this yearโ€™s wine. The wine was made off site in the Adelaide Hills, which allowed for better management of harvesting times and transport.

Whilst the winery awaits their own fruit to bear, they have collaborated with a trusted and reputable grower of Adelaide Pinot Gris who not only grows the fruit but also undertakes the fermentation on site, which allows for better management of harvesting times and transport. The fruit was hand-picked and whole bunch pressed. The pressing fraction was vinified separately. Both portions were cold settled as juice and fermented using a neutral yeast strain. Standard post ferment settling and filtration occurred post ferment. No oak was used.

The 2024 vintage was preceded by a cool December and January with below average rainfall for that period. The rain stayed away in February and March, but the temperature really kicked in from the middle of February to the middle of March with numerous days reaching temperatures above 35หšC. This warm period led to a compressed vintage of high quality fruit.
