Winemaking Notes

De-stemmed to small fermenters with the inclusion of 15% whole bunches and cold soaked for 5 days. Wild ferment at 28°C for 7 days. Pressed to barrel for a wild malolactic fermentation. Matured in new to 4-year-old French barriques for 12 months. Serve at 14–16°C. Decant for 20 minutes. Drink now or cellar for 3–5 years.

Producer History

Scotchmans Hill was established in 1982 on Mount Bellarine — an extinct volcano that forms the tip of the Bellarine Peninsula. The land on which the vineyard was planted had been given its name by a group of Scottish immigrants who settled in the area in 1885. A winery with deep roots in the Peninsula’s history and an unwavering commitment to cool-climate viticulture.
