Winemaking Notes

Fruit is sourced from the Gillards Road property and select Hunter Valley vineyards sharing the same soil type — deep hillside red/brown terra rossa of limestone parentage. Machine picked in the early hours of the morning at optimal sugar, flavour, and acid balance, the fruit is handled oxidatively in the winery: crushed, pressed, and pumped to stainless steel tanks to settle. The clear juice is racked and inoculated to begin fermentation, then transferred to French oak barrels of varying age at approximately one third through fermentation. Fermentation is completed in barrel, after which malolactic fermentation is allowed to occur naturally — typically 10–30%. Lees are stirred monthly. The wine is pumped from barrel to stainless steel tanks and bottled twelve months prior to release.
