Hand-picking commences in mid-September for the Trebbiano di Soave component and continues through October for the Garganega grapes, ensuring each variety is harvested at optimal ripeness. Upon arrival at the winery, the grapes are carefully de-stemmed and gently crushed using a pneumatic press in nitrogen saturation, a technique that protects the delicate aromatics and prevents oxidation. The free-run juice is fermented at low temperaturesβ€”between 14-18Β°Cβ€”in glass-lined concrete tanks, a traditional method that preserves the wine's fresh, vibrant character whilst allowing the pure expression of the fruit to develop. Following fermentation, the wine remains in glass-lined concrete tanks on its fine lees for a period that varies according to the vintage, typically 5-9 months. This extended lees contact builds textural complexity and adds subtle depth without overwhelming the wine's characteristic elegance.
