A mix of de-stemmed and whole bunch fruit, with parcels fermented separately in traditional open top fermenters to preserve the individual character of each parcel. The wines were gently pressed, racked, and transferred to oak for maturation before blending and bottling — a winemaking approach that respects traditional technique whilst embracing the dynamic and imaginative style that defines the Pepperjack team.
