Patrick Piuze French Bubbles Non Dosé Blanc de Blancs NV is a wonderfully dry and elegant sparkling wine — 100% Chardonnay, méthode traditionnelle, made in collaboration with Champagne house Mondard Diligent from 25-year-old vines planted on limestone and clay soils in the village of Tonnerre, 10km from Chablis, under the Vin de France appellation. Hand-picked as always with Patrick Piuze, fermented in stainless steel, and aged nine months on lees. The terroir of Chablis in sparkling form, from one of the region’s most celebrated and uncompromising winemakers.

Appearance

Bright pale gold with fine, persistent bubbles — the elegant, precise colour of a 100% Chardonnay méthode traditionnelle from 25-year-old vines on Tonnerre limestone, with the freshness and purity that nine months on lees.

Aroma

Winemaking Notes

“100% Chardonnay méthode traditionnelle Blanc de Blancs NV. Made in collaboration with the Champagne house Mondard Diligent, this sparkling wine comes from vineyards located in Burgundy (but under the Vin de France appellation). The vines are 25+ years old and planted on limestone and clay soils from the village of Tonnerre (10km from Chablis). All the grapes are hand-picked as usual with Patrick Piuze. The wine is fermented in stainless steel tank and then spends 9 months on lees.” — Patrick Piuze

Producer History

Patrick Piuze is the “bad boy” of Chablis — a Canadian-born négociant who struck out on his own in 2008 after working with Jean-Marie Guffens at Verget and Jean-Marc Brocard, and has since built one of the most celebrated and uncompromising portfolios in the appellation. Piuze forcefully forswears corrections of any kind — no chaptalization (unless absolutely necessary), no enzymes, no acidification, no new wood — and focuses instead on establishing long-term relationships with owners of propitious terroir, securing contracts on some of the most choice parcels around Chablis. His philosophy is simple and absolute: “The only thing truly original in the world of wine is the underlying terroir. Anyone can copy anyone else’s techniques so what else is there to make great wines? I believe the answer is simple: Terroir.”

Neal Martin describes his approach as “obsessive, occasionally maverick” — a winemaker who does what he feels is right, even if it contradicts the consensus. Burghound calls these “wines to buy in quantity as they’re inexpensive while offering generally fine quality.” Nick Stock at jamessuckling.com notes “good definition of place” across his range. The Blanc de Blancs NV is the fullest expression of that philosophy applied to sparkling wine — Tonnerre limestone, old vines, extra-brut precision, and the terroir of Chablis in every bubble.
