Whole bunch pressed, with the unclarified juice barrel fermented in seasoned oak puncheons. Aged for nine months with regular lees stirring to build weight and complexity. Bottled at 13% ABV. Total acidity 6.6, wine pH 3.32. Winemakers: Lindsay McCall and Jamie McCall.
