Mr. Mick Rosé 2018 by Tim Adams (Clare Valley)

Mr Mick’s passion for Rosé dated back to the late 1960’s when his nephew had just qualified from University at Roseworthy. Keen to impress his uncle, he produced the first Rosé under Mr Mick’s watchful eye.

Today, Mr Mick Rosé revives his intent for the wine in a way no other Australian Rose seems to do – ideal to serve with food but also great as an aperitif.

Sangiovese, Tempraillo and Mataro fruit was crushed, chilled and held cold soaking separately for 12 hours in the press in order to extract vibrant colour and red berry flavours from the skins. The juices were cold settled and fermented separately prior to careful blending, stabilisation, clarification and bottling in May 2018. Slight residual sweetness remains in order to enhance the natural fruit characters.

This wine is a great match with all Asian cuisine, or with any food which has a little warmth. It’s also great on its own for all occasions.
