Winemaking Notes

Little Giant Pinot Gris 2025 is sourced from premium Adelaide Hills vineyard, with fruit crushed and then left for three hours on skins before pressing to achieve desirable phenolics and texture. The wine was fermented cool and then matured on yeast lees for 7 months in stainless steel to encourage mid palate texture. Hand-crafted and made with minimal additions and preservatives, this is wine made of the vineyard. The grapes are picked at optimal ripeness, minimally handled in the winery and fruit vibrancy is not hidden by non-essential artefact. Seeking first and foremost fruit expression, drinkability and to be a great accompaniment to food. The production process creates generous mouthfeel with flavours of pear, white stone fruits and hint of freshly cut herbs, whilst vibrant acidity provides crisp, refreshing finish that lingers impressively.
