The D.O.C.G. 'Asolo Prosecco' area lies in the Veneto region, north of Venice, in the province of Treviso in the Montello and Colli Asolani hills at the foot of the Dolomites. The finest vineyard sites lie on the southern side of the hills, on sunny south-facing slopes whose gentle gradient and loose soils offer excellent drainage, creating ideal conditions for producing premium Prosecco of exceptional quality and elegance. This prestigious area is characterised by mild springs, warm summers, and mild autumns, providing a favourable climate for the development of the intensely fruity aromas and delicate acacia flower character that define La Gioiosa Millesimato Asolo Prosecco DOCG. The grapes are grown in the estates according to the guidelines provided by the certification Biodiversity Friend, reflecting a commitment to sustainable viticulture and environmental stewardship. Winemaking Notes

La Gioiosa Millesimato Asolo Prosecco DOCG is crafted using meticulous winemaking methods that preserve the fresh, fruity character of the grapes. Whole grapes are put into the pneumatic press for soft pressing, ensuring gentle extraction and maintaining the delicate aromatic profile. The resulting must, after a first racking, is put into controlled temperature tanks where it remains until it is used for the production of the sparkling wine. The must with added yeast cultures selected by La Gioiosa is then put into vessels where fermentation takes place at a controlled temperature of 15-16°C to enhance all the harvest fragrances and preserve the intensely fruity aroma with clear hints of ripe golden apple. Upon reaching the required alcohol and sugar content, fermentation is stopped by refrigeration, creating the slightly sweetish, soft character that makes this Prosecco so approachable. After a short settling period, the sparkling wine is ready for bottling, resulting in the fine, persistent perlage and agreeably fruity, harmonious finish that characterise this elegant expression from the prestigious Asolo appellation.
